The foundation of our engineering platform is the thermal separation of the twin cylinders. Traditional dual-dispenser machines often share a single large compressor that regulates both cylinders simultaneously. If one hopper runs low or is configured with a product containing a different sugar-to-water ratio, this shared loop can lead to over-freezing or crystallization on one side.
Our dual-hopper models employ independent dual Embraco or Secop compressor systems. This layout dedicates independent thermal control to each cylinder and hopper, allowing for precise adjustments based on the viscosity and density of the specific soft-serve mix. Real-time temperature sensors in the hopper maintain the mix within the safe FDA-specified range of 2°C to 4°C, preventing bacterial growth while preserving structural consistency. The freezing cylinders utilize advanced scraping beaters that maintain tight tolerances against the polished interior walls, ensuring high overrun values and smooth texture.
